Simplicity + Desperation + Creativity = Power Lunch

What do you do when it’s time for lunch, you desperately need to go grocery shopping (but don’t want to stop the work momentum), and all you have left in the fridge is a half can of coconut milk and a bag of kale? Plus, you only get to borrow your ex-husband’s Vitamix for one more day????
You make a coco-choco-chia-kale smoothie, of course.
It sounds a little crazy, but I tell you what, it is funk-o-licious.
I’m always encouraging my clients to have fun in the kitchen. Nourishing ourselves shouldn’t be a chore, and it doesn’t have to be complicated, either. A simple salad of greens, sprouts, seeds, beets, carrots, and cheese can satiate as much as a build-your-own-burger from the Counter, plus it costs ten times less.
Maybe it’s all in my head, but I usually have more energy when I eat something I’ve prepared myself. And seeing that we’re all busy people, keeping it simple and fresh is usually the best way to go. However, that doesn’t mean that you can’t be creative and fun all at the same time. Au contraire — that’s usually when the culinary magic happens. (Just ask my kids, who are totally addicted to shows like “Chopped” and “Cut throat kitchen”.)
So go for it! Throw some fresh and fun foods together that you wouldn’t normally consider being a tasty smorgasbord. And then feel your body do a little funk-o-licious happy dance.
Coco-choco-chia-kale Smoothie
Here's the recipe for the Coco-choco-chia-kale Smoothie:
1 cup coconut milk (preferably full-fat, organic)
1 cup ice
2 Tbspn coconut oil
2 Tbspn chia seeds
2 Tbspn organic raw cacao powder
2 handfuls of kale, washed and stems removed
1 tbpsn raw honey
Place all ingredients into high-powered blender such as a Vitamix, secure lid, and process until smooth. (I use the Frozen Desserts mode because of the ice.) Pour into a glass container and enjoy!
